Cuca Spanish Sardines

It is no secret that the man behind the Cuca brand of Spanish conservas is Movida chef Frank Camorra. He and his team travel to Spain looking for the best products to bring back to Australia. “The Spanish have a culture of only putting the very best into tins and jars,” says Frank. “They take the bounty of the season, the best of the catch and preserve it under glass or in steel cans. That food culture is called conservas.” Frank says that conservas, such as anchovies, baby calamari and asparagus are common bar fare in Spain where a tin of great sardines or red peppers is served alongside sliced jamón and cheese. Cuca sardines can be eaten straight from the can or put on hot sourdough toast and seasoned with sea salt. They are rich tasting, have a great texture and are incredibly delicious with an ice-cold beer, glass of Alberino white wine or even a Spanish sherry or vermouth.
