Chef Luca Ciano - Pumpkin & Amaretti Sauce

Luca Ciano is a well-known Bondi-based chef. He was born into a family of food lovers and learned to cook at his nonna’s side. “It is a myth that all nonnas are natural-born master chefs,” says the gregarious chef. “But mine was one of the best.” We love his Pumpkin and Amaretti Sauce which is perfect for any vegetarian pasta or risotto. This unique combination is Chef Luca Ciano’s take on the famous Italian Pumpkin ravioli. The filling is turned into a flavoursome pasta sauce combo. The sweetness of the pumpkin matches perfectly with the subtle, nutty flavour of the Amaretti. Italian Grana Padano cheese is then added. Created and developed to suit any pasta dish, especially for vegetarian creations, can also to be used for risotto by simply adding the sauce midway through the rice cooking process.
