Big Fat Reubens

Sauerkraut is healthy? Sure is! Then this must be a healthy sandwich as the sauerkraut counteracts the cheese and Oakwood pastrami. Makes 4.

  • 8 slices rye bread

  • Butter for spreading

  • 8 slices gruyere

  • 8 slices mozzarella

  • French mustard

  • 8 slices Oakwood pastrami

  • Pickled cucumber slices

  • 200g/ 1 cup Power Kraut sauerkraut

 Russian Dressing

  • ½ cup egg mayo

  • 3 tbsp tomato ketchup

  • 2 tbsp horseradish

  • 2 tsp Worcestershire sauce

  • 1 tsp sugar

  • ¼ tsp paprika

  • Salt

Preheat heat a heavy fry pan over low medium heat or sandwich press.

Make the Russian dressing by mixing all the ingredients together. This will keep for 14 days in the fridge. Butter one side of each slice of bread. Line each slice with the cheese. Spread each side with a bit of mustard. Place a piece of pastrami, some Russian dressing, sauerkraut, and pickled cucumber on four of the slices. Cover with the other slice of bread. Spread the top with more butter. Turn upside down and place the buttered side on the hot surface. Butter the other side. Cook for 5 minutes or until the cheese melts.

Cut in half and serve immediately with a wheat beer.
