Perhaps the World’s Finest Maple Syrup
If you have never had single variety, single estate organic Canadian maple syrup then spoil yourself with what we consider to be extraordinary syrup from a single farm in Quebec called Escuminac, named after the Canadian region, where syrup maker Martin Malenfant founded the business in 1987. He grew up in the maple forests of Québec. In the late 1980s he bought his own erabliere, the Quebecois French for a sugar bush or what we would describe as a maple plantation. Each year he taps 65,000 trees to produce this exquisite maple syrup. So beautifully packaged, it could be given as a gift or sat on the shelf in the cocktail bar for a flavouring or poured indulgently over pancakes and fresh forest berries. This syrup is both extra fine and very rich, its aromatic profile recalling warm buttered brown sugar, date purée, English toffee, and green anise, with a subtle touch of curry. On the palate, it proves to be dense, full, textured, just syrupy enough with a lingering flavour.
