Bottarga is cured and gently air-dried grey mullet roe. It is made from the egg sack of wild-caught grey mullet. They are cleaned, salted and sun-dried in the sunny north of New South Wales. A little goes a long, long way and releases its aroma and flavour when warmed. It is not an ingredient to cook with as it destroys its delicate nature.
